Chickpeas (Cicer arietinum, L.) lentils (Lens culinaris, Medik.) belong to the leguminosae family plants.

The legumes produced by the Azienda Agicola Violati are grown without the use of pesticides in compliance with the organic farming standards.

The sowing of the legumes takes place in suitable parcel of land characterized by loose and perfectly draining soil to enhance the organoleptic characteristics of legumes.
Generally, the sowing occurs at the end of the winter and the harvest in late spring or beginning of summer.

After the harvest, the legumes undergo to a natural environmental desiccation. The seeds taken out from the pods are carefully selected and calibrated before packaging.

The Violati legumes are in organic production as well as olive oil and wines.

Chickpeas and Songino salad with mustard

Sort through the chickpeas Sultano and remove any stones or other debris.
Soak them for about 24 hours (3 liters per 500g). Rinse quickly, put them in a saucepan in cold water and cook for 30 minutes, (half cooking time in pressure-cooker.)

Emulsify six tablespoons of oil, one of vinegar, one of mustard and a drop of cold water, add salt to taste.

Mix until a homogeneous sauce is obtained.

Wash the songino and put it in a salad bowl. Peel the carrots, cut them into thin slices and add them to the salad.

Once the chickpeas have cooled add them and season with the vinaigrette.

Mix gently and serve.

Preparation

Lentis, turmeric, potatoes and oranges

Sort through the lentils and remove any stones or other debris, rinse quickly.

Place the lentils in a saucepan, cover them with cold water and cook over low heat for 15-18 minutes. If water is absorbed and the lentils are not cooked, add some hot water.

Peel the potatoes and cut them into cubes. Peel the leeks and cut them into rings.

In a large sautè pan add EVO extravirgin olive oil Violati, leeks, potatoes and salt to taste; saute until golden brown, stirring frequently. Add fennel seeds, cover and cook for 15-20 minutes.

Add the lentils Elsa with turmeric in the pan and keep on cooking for 5 mins.

To finish the dish add some freshly grated orange zest before serving.
